Peppermint Hot Cocoa Cookies [vegan, GF]
What you'll need:
1/2 cup vegan butter, melted (I use Earth Balance)
1/2 cup cane sugar
1/4 cup coconut sugar
1 tsp vanilla
1 flax egg (1 Tbsp ground flaxseed + 3 Tbsp water, stir and let sit 10 minutes)
1/4 cup coconut milk
1 1/2 cup gluten-free all purpose flour (I use Namaste)
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
3 Tbsp cacao powder
2 drops peppermint essential oil (I use Young Living)
1/2 cup dark chocolate chips (DF)
Marshmallows and crushed candy canes for topping
What to do:
Preheat oven to 350
Cream butter and sugars together in a stand mixer
Add in vanilla, combine
Add in flax egg and coconut milk, combine
In a separate bowl, mix flour, baking soda, salt, cinnamon, and cacao powder
Slowly combine the dry ingredients with the wet in the stand mixer
Drop in peppermint essential oil, combine
Fold in chocolate chips
On a baking sheet with parchment paper, use an ice-cream scooper to scoop the cookie batter onto the sheet
Flatten each cookie a bit with your palm
Bake 8-9 minutes
Top each cookie with 3 marshmallows and a sprinkle of candy cane and broil for 1-2 minutes, watching carefully to make sure marshmallows don't burn
Serve with a hot cup of coffee or a glass of cold [coconut] milk - enjoy!
