Coconut Peanut Butter No-Bake Cookies

I don’t know about you, but no-bake cookies have always been a hit at our house! And as the one who loves baking, I’m not complaining because that means I don’t even have to turn on the oven to make them (and they only require one pot …. so, less dishes!)

This Easter, I decided to make festive no-bake cookies with fun sprinkles and candy. I used my favorite local peanut butter from Wild Friends and made sure this was an allergen-friendly recipe the whole family can enjoy!

I hope these make it into your Easter baskets this year! (or more like… on the counter for everyone to grab!)

Coconut Peanut Butter No-Bake Cookies

Yields about 16 cookies

Prep Time: 10 minutes

Cooling Time: 3 hours - overnight

What you’ll need:

  • 1 1/2 cup peanut butter (I used Wild Friends Peanut Cashew Super Butter)

  • 1/4. cup vegan butter (I used Earth Balance)

  • 1/4 cup coconut oil

  • 1/2 cup coconut sugar

  • 2 tsp vanilla

  • 2 cups gluten-free oats

  • 1/2 cup shredded, unsweetened coconut

  • 1/2 cup dairy-free dark chocolate candies (I used Unreal brand) - or M&M’s if you can have dairy

  • Optional: Festive sprinkles

What to do:

  1. In a pot on the stove, melt peanut butter, vegan butter, and coconut oil

  2. Remove from heat and stir in coconut sugar and vanilla

  3. Mix in oats and shredded coconut

  4. Spoon onto cookie sheet (flatten out a bit with the spoon)

  5. Top with sprinkles and candies

  6. Place in the fridge and allow to cool 3 hours, or overnight.

    NOTE: Keep these in fridge until serving to avoid melting (they melt easily because they use less sugar)
